Pumpkin Spice Bars
Ingredients
10 Eggs
6 scoops nanopro vegan
1 can (12 oz) pumpkin puree
¼ cup Coconut Oil, melted
1 tbsp Vanilla
½ cup Coconut Flour
1 ½ cup stevia in the raw
1 tbsp Cinnamon
1 tsp Baking Powder
1 tsp Baking Soda
3 tsp Sea salt
3 tbsp pumpkin pie spice
¼ cup water
Cream Cheese Frosting:
15 tbsp cream cheese
15 tbsp stevia in the raw
Mix together until smooth. Spread on cooled bars.
Instructions
1)Preheat oven to 350 degrees F. In a large bowl, add pumpkin, eggs, coconut oil, water and vanilla. Mix well.
2) Add all dry ingredients. Blend into the wet mixture, scraping
down the sides with a spatula. Distribute the batter evenly into a 8 x 10 baking pan.
3) Bake for 30 minutes, until a toothpick comes out clean. Cool and frost. Store in the refrigerator.
