25 Days of Nanos ⭐ Coconut Cake

Ingredients 


Cake  
6 Eggs

½ cup Coconut Oil, melted 

1 tsp Vanilla 

½ cup Coconut Flour 

½ cup Shredded Coconut 

1 cup stevia in the raw 

1 tsp Baking Soda 

1 tsp Salt 

1 tsp Apple Cider Vinegar 

½ cup Water 


Frosting 

16 oz cream cheese, pull out of fridge 30 minutes prior to mixing  

2 cups stevia in the raw 

½ cup water 

3 tbsp shredded coconut for garnishing the top of the cake 



Instructions 


Preheat oven to 350 degrees F. In a large bowl, eggs, apple cider vinegar, coconut oil, water and vanilla. Whisk well. Add all dry ingredients into a separate bowl. Blend into the wet mixture, scraping down the sides with a spatula. Distribute the batter evenly into a greased 9” cake pan. Bake for 30-35 minutes, until a toothpick comes out clean. Cool completely. 
While cake is cooling, mix frosting ingredients together with a hand mixer for about 3 minutes until the frosting is nice and fluffy. Once the cake is completely cooled, cut into 2 layers. Place the bottom layer on the plate and frost. 

Place the top layer on top of the frosted layer and frost top and sides. Garnish with remaining shredded coconut.  ENJOY!
